BREAD: Traditional Irish Soda Bread
Ingredients
2 1/2 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1 cup buttermilk (plus 2 T extra if needed)
Instructions
Preheat the oven to 350F.
Combine the dry ingredients in a large bowl and mix. Add buttermilk and incorporate using either a large spoon or your fingers until the dough comes together and appears moist but not so sticky it can\'t be lifted out of the bowl.
Note: You might need to modify the amount of buttermilk, two tables spoons more or less, depending on the weather that day. \\
Shape into a round loaf and place onto a baking sheet lined with parchment paper. Use a sharp knife to cut an "X" into the top. Bake for about 45 minutes until dark golden bown. Check readiness with a baking tester or toothpick; when the bread is done the tester will come out clean.
Cool on a wire rack for about ten minutes then slice. The bread is best when served right away, and can be eaten plain or with butter, jam, or any other topping.
