APPETIZER: Chilled Ginger & Lime Soup

Ingredients

1 Tbsp Butter
2 Scallions, finely diced
2 Tbsp grated fresh ginger
2 tsp freshly squeezed lime juice
2 tsp freshly grated lime zest
2 cloves garlic, crushed
¼ tsp crushed red pepper flakes, plus more for garnish
1 tsp sugar
Salt
3 cups plain yogurt
1 Tbsp coarsely chopped fresh coriander,
   plus more for garnish (may substitute dried, to taste)

Instructions

Heat the butter in a small pan over medium heat.  Add the scallions, ginger, lime juice, lime zest, and garlic, and sauté until the scallions turn glassy.
 
Reduce heat, and add the crushed pepper flakes, sugar, and salt to taste.  Cook until the sugar has dissolved, then remove from heat, and set aside to cool.
 
Blend with an immersion blender until smooth.  Stir in the yogurt and coriander.
 
Transfer to an airtight container, and refrigerate for at least one hour.
 
Serve chilled and garnish with fresh coriander and red pepper flakes.
